[Cheater] Sweet Potato Mujaddara ================================ Mujaddara is a super simple Lebanese dish which only has 3 main ingredients (lentils, rice, onions) but packs a wallop of flavor... I ordered the dish multiple times at a restaurant trying to figure out what spices were in it until I figured out that there really weren't any besides a small amount of pepper. I like to add steamed sweet potato on top. It's also absurdly cheap, easy, and if you have a rice cooker, almost effortless. You can also make it *even easier* if you're really lazy by using fried onions from a can. If you have time, fry the onions yourself. But if you want really a impressively delicious dish that you can make in 2.5 minutes at home for less than $0.75 a bowl, give this a try. Instructions: ------------- - Put 1 cup brown lentils & 1 cup basmati (or whatever) rice into rice cooker, add water, turn on (.5 min) - Chop up 1 sweet potato, put in steamer (1 min) - Serve rice & lentils into 4 bowls, add sweet potato, and put 2 tbsp fried onions from a can into each bowl, grind a touch of black pepper and/or salt if you like (1 min) Statistics: ----------- - servings: 4 - Cost: $0.62 / bowl, < $2.48 total. - Active time: 2.5 minutes - Deliciousness: Disproportionately high.
